Turon (Fried Plantain Rolls)

Turon is an all time Filipino snack made from plantain bananas and jackfruit rolled in sugar and wrapped in lumpia (spring roll) wrapper that is fried / baked to a crisp.

 5 Ripe plantains, peeled and sliced into halves both, horizontally and vertically
 20 Vegan spring roll wrappers
 20 oz Can of sweet, ripe jackfruit (you can also use mango slices)
 ¼ cup Water
 ¾ cup Coconut Sugar
 ¾ cup Coconut Oil

Preheat oven to 300 degrees.

Pour coconut sugar into a medium sized bowl. Roll a plantain slice in coconut sugar. Position plantain slice in the center of the spring roll wrapper.

Add 3 to 5 jackfruit pieces. Bend top and bottom of wrapper to fit the plantain and jackfruit. The wrapper should be snug enough so that it is hugging the fruit that it’s carrying. Roll the wrapper.

Using a pastry brush, brush the end of the wrapper with water in order to seal the turon. Next, use the pastry brush to glaze first with coconut oil and then with coconut sugar. Repeat for each piece.

Assemble evenly on a baking sheet. Bake for 30-35 minutes or until golden brown, turning the pieces as needed so all sides become crispy. Makes 20 pieces of turon.
