Strawberry Creme Truffles
These yummy truffles are great for vegan, gluten free, grain free and paleo friendly diets. They are great munchies to have in the freezer or fridge anytime you're craving a sweet.
These can be stored in the fridge or freezer. They should keep for a couple weeks in the fridge and a few months in the freezer. If you store them in the freezer, they may be slightly hard. They should be perfect after a minute or two though.

Mix the filling ingredients in a food processor very well. Place in the fridge for 15 minutes to harden.
Drop small balls of the filling onto a lined baking sheet using a spoon or cookie scoop. Place in freezer for about 30 minutes to firm.
While the strawberry filling balls are in the freezer, melt the chocolate. Using a double boiler method, melt the chocolate chips and the milk. Keep stirring until all the chips are melted and the mixture is smooth.
Using two forks, working quickly, roll the strawberry filling balls into the chocolate and place them back onto the lined baking sheet. Place the finished balls in the freezer to firm for about 60 minutes.
