Stir-Fried Bok Choy and Tofu

A simple and healthy dish for everyone.

 1 tbsp Olive oil
 1 Small onion, peeled and chopped
 2 Clove garlic, peeled and minced
 1 Medium, chopped
 3.50 oz Tofu
 ¼ cup Water
 1 tbsp Vegetarian Stir Fry Sauce or Mushroom Stir Fry Sauce
 4 Pieces of Bok choy, ends trimmed and cut into thirds
 Salt and pepper to taste

In a wide pan over medium heat, heat oil. Fry tofu until golden brown on all sides. Drain tokwa and set aside. When cool, cut into cubes.

In the same pan, sauté onions and garlic and cook until limp and aromatic.

Add tomatoes and cook, mashing with back of spoon, until softened.

Add water and bring to a boil.

Add the vegetarian stir-fry sauce. Season with salt and pepper to taste.

Add the tofu, then the bok choy (starting with tougher ends first) and cook, stirring regularly, for about 2 to 4 minutes or until tender yet crisp. Serve hot.
