Mixed Berry Compote + Creamy Chia Pudding
This quick+easy recipe can be served for breakfast or dessert and uses So Delicious Coconut milk Creamer, mixed berries and chia seeds to create a tart and creamy good-for-you dish!
Whisk the chia seeds, So Delicious Coconut milk Creamer and plant-based milk of choice in a bowl. Leave out at room temp for about 15 minutes. Give it another whisk, then cover and allow it to chill in the fridge. During this time, the chia seeds will expand and the pudding will thicken.
Place the berries into a medium-sized saucepan over medium heat. Stir until the berries break down a bit, then add in the fresh lime juice and agave. Mash with a fork or zap a few times with an immersion blender until semi-chunky. Remove from the heat and stir in the chia seeds. This will help thicken up the compote. Allow to chill in the fridge completely.
Place the desired amount of compote into a bowl or glass, and top with the desired amount of chia pudding. Serve with toppings of your choice.
