Green Jackfruit in Coconut Milk

Young jackfruit cooked in coconut milk and chili peppers for a rich and bold vegetable dish.

 2.50 lbs Unripe Jackfruit, sliced
 2 tbsp Coconut Oil
 5 Cloves garlic, minced
 1 tbsp Ginger
 1 Medium Onion, chopped
 3 cups Coconut Milk
 1 Red Chili Pepper, sliced into 5 pieces
 Salt to taste

Place jackfruit in a saucepan and add enough water to cover. Boil for 15 minutes or until tender. Drain and set aside.

Add coconut oil to a preheated pan. Sauté garlic, ginger, and onions until soft and fragrant.

Add boiled jackfruit and coconut milk. Boil until sauce thickens.

Season with salt and pepper. Add sliced red pepper and serve hot.
